I did pork chops in brine....
to have Thursday night and then, of course, we ended up at urgent care for Tony;s cut, so that night we picked up Taco Bell on the way home. So, I ended up doing the pork chops last night. We had them with asparagus and dh had rice. Soaking them in the brine really made such a difference in how tender they were. I seared them in the cast iron skillet and then cooked them in the skillet in the oven. I also put the asparagus i the skillet in the oven. I put a little brown sugar on the pork chops. They turned out really well.
