We have changed these on BFB engined A4's.
IIRC, drain coolant, alternator & throttle body off.
While you are there it may pay to check/renew breather pipes/valves.
Two hours should cover it for the first one.
Malcolm, a normal thermostat only responds to the coolant temperature, a "mapped thermostat" can also be adjusted by commands from a "map" within the ECU.
