We haven't had a lot of options, but it wasn't a bad week. Not as nutritionally sound as I'd like, but still not bad.
I made flat bread, and have one piece left, along with 1 biscuit. I can think of meals with them!
We ran out of masa this month, and I use it a lot. I add a bit to my gf flour to bake, I use it for corn tortillas, I make my stovetop tamales...a weekly event, from it, and also my cornbread. Anyway, I assessed my $'s, and decided that it was worth the investment, and the last purchase to be made for a while. It is only sold in 25 lb. bags, but we use it all the time for easy, cost effective meals. It should be here on Monday. I haven't bought any for over a year!
I have no more small pieces of meat, including the cube steaks. I've got 2 small roasts left, not quite 3 lbs. each before cleaning, they will probably be 2.something when done.
I don't want to waste the opportunity to put food in the freezer, so have been carefully contemplating what to do with them.
My thoughts are: roast 1 - make stew stretched with lots of carrots, celery, and onions. And then use the 2nd half to make chili, which we use every week.
Roast 2 - I want to make patty melt pockets, those empanada type hand pies. We could eat them once a week, and the filling goes farther than eating the meat other ways. Just use meat, and cooked quarter ringlet onions, plus Dh can put cheese in his. They freeze and reheat great.
The 2nd half would go for stir fry or noodle dish starter. Brown, add broccoli, greens, onions, and celery, with fresh ginger and garlic. Freeze. To make noodle dish, thaw bag of starter, add pad Thai noodles and a little broth, then water, slowly to cook the noodles. It works a lot like risotto that way. I use a faux soy sauce in it.
Each should make several bags of whatever I'm making. 1 meal per bag.
So, I'm more in the planning stages for, hopefully, this week!
