I'm sorry about your tooth. Mine is constantly a little sore, now that I've taken all of those antibiotics, so I eat carefully. The Dr. is concerned because the new corona variant is here, in our county and also Humboldt. He wants more vaccines in people before sending me off to a dentist for what could be repeated work to solve. Unless unavoidable, but he's not comfortable with it. Thanks for asking.
I had lunch today, but we can't seem to get ahead with meals so that there's anything for lunch that I can eat. I don't like going so long between meals, but unless we can find something specifically for lunches, once I get more fruit for breakfasts/taking morning pills, it's going to remain a problem.
I may try to get some fresh chicken just for lunches and freeze it in smaller portions, so that I can make a couple of days of chicken salad or something with it, once we shop. The problem is, the stores are usually short on chicken these days.
I've talked to Dh about getting some tortillas that we make in the freezer. He will always help if he's up to it/his back is not too bad. If I could have just one tortilla with some of that, or egg salad, or a few strips of meat, it would be something between early morning and dinner, which is usually not as early as we'd like. I give those examples because of the protein.
I've also thought of some fried rice, already frozen in small packs for lunch, or stew.
The problem is, I work ridiculously hard with Dh to prep a mountain of vegetables while still good, then cook them into...fried rice, stir fry, stew/soup, chicken pot pie, chili, burrito meat, etc. But, no matter how much I make, I never have as much as we should have to freeze for dinners for the 2 of us. Dh can't eat just a little. He needs to gain weight, and if he eats just a little, he is hungry and loses weight.
I need 30 dinners a month for us, from whatever I can prep and cook at the beginning of the month after shopping. I keep working at it, but this month, for example, have barely kept ahead of meals.
I'll keep working on it.
No, no real canned goods. I used to be able to eat those. I can eat some canned olives, corn, and pears. Maybe some other thing that I'm forgetting about. That's why getting ahead of meals can be a challenge. I know that this month it didn't work well because of my tooth/jaw. When it's that bad I can't concentrate, do much of anything, etc. The pain keeps me from doing things, but so do the antibiotics, etc. The month is a blur because of it. :-(
I am not allergic to tuna, but with my RA, I can't move if I eat it, or several other foods. They cause my joints to become a big problem.
Yes, all of us are having on and off energy. I wonder why? Age? Time of year/weather?
I'm glad about the well!
Oh no, about the trailer/truck! I'm so glad that no one got hurt!
Hmmm. Maybe our energy issues are flares of our health problems? Those can be brought on by stress, weather, and more, or all of the above.
I am really happy about the ideas which have us still having food in the house. I wish that I could have been clearer headed, and in less pain, to make the best use of things this month. Hopefully, with any luck, next month will be easier.
And now, typing it out, I can see the problems and solutions. I need 30 lunches, and will get pen to paper to do math and make a list. Yep, another list! :-)
Have a good night!
