My breakfasts have degraded. I was down to fruit, but it was good. Now, with having eaten too many days of it with my tooth/jaw earlier in the month, and going to shop later for more than anticipated, I'm out of it.
I learned something about me, and oatmeal, that I didn't know. I do need to eat it for health, but...I can't eat it as a meal, unless I have another meal planned within' 3-4 hrs. of eating it.
I'd been complaining that I was going too long between breakfast and dinner, and was having 'melt downs' to where I would end up in tears sometimes, etc.
Last week, when nothing else was involved, it occurred to me that it was the oats themselves. Finally, with watching carefully what happened, it became clear that after a short time they were dropping my blood sugar in an extreme way. Maybe if I had other things with it, like fat (butter), etc. it might be a little better. But, as it is, it's a problem.
I don't want to stop eating them, due to the soluble and insoluble fiber, but I can't eat them without other food in the wings, which I rarely have, especially now with running out of so much until we shop.
So, I made a new rule: Oatmeal as a dessert, or as a breakfast IF I have something ready-made which I can eat within' 3-4 hrs. max.
Some days I'm lucky, and have a little something left from dinner, though not so much recently, or can hardboil an egg or something, though we are getting low on those currently. Normally, I'd be shopping in 3 - 5 days, not 13/14.
2 days ago we made a big pot of chicken broth. I was so looking forward to noodle soup, chicken salad, etc. But, the big pack of chicken that went in it from the freezer was bad. :-( So, we had to throw all of it away. :-( I can't make more until we shop on the 8th. I do have chicken in the freezer still, but not for soup. I have one pack of legs to make in the oven with bbq sauce, and one for roasting.
Oh! Before I cont. answering your post, it's snowing!! It's super cold - 31 at 1 - and more 'weather' is predicted. (More on TT.) With all of these windows, I am watching it come down in 6 out of 8 windows in my view! :-) The flakes are small to medium in size, and coming down fast.
Your other meals sound good to me, too. Reasonably easy, and extremely tasty and balanced.
I've been craving salad, too. Maybe you can make smaller salads, vs. entire meal salads, and have them alongside your carbs? I like salad with mashed potatoes, grilled cheese etc. It's 1/2 the salad itself, and 1/2 the dressing, I think, lol!
You've really had a lot on your plate - not literally! - so it's no wonder that you aren't getting to certain meals. I'm just glad that you have the other foods to fall back on. Good planning and shopping!
Ack! I'm sorry for your health issues all coming at you at once! :-(
Yes, after a while, you have all the plastic jugs that you need. Does your usual litter offer that option, or will you need to change brands?
