We had a pretty good food week.
For three days it was actually great, when I got burritos! lol! I made the meat in a slightly different way.
To replicate my favorite stand burritos that were not shredded meat, which I love too - I'm just a burrito lover! - I learned that you have to grind the meat 2ce...before cooking, and again after it starts to brown.
Then, you have to add a bit of starch/flour-starch - you can't be as choosey when using gf products - to the meat as you finish it in the pan after the 2nd grind. It came out so well, that I've not changed the recipe in 25 or so years.
This time, I thought that I would try something different. Rather than a dusting on the meat in the pan, and browning, etc. I put the 1/2 cooked meat in the grinder as per usual, and added the flour-starch to the grinder with it! Then, I cooked it, finished browning it, etc.
It really did make a difference in the texture. I was also a little bolder with the flavors. I usually make chili bold, meat for shredded meat burritos bold, but this meat for burritos a little more understated, to taste like I remember. Anyway, they were very tasty.
Now I'm plotting on more meat, so that I can make more!
Also, I changed my flour tortillas a little, kneading them a bit more, and that worked out very well.
As I mentioned on TT, I needed to change menus, shopping lists, etc. as we are all having to go 8-10 days longer before we shop next month. Thankfully, we all have food. Not fresh vegetables and such, but we do have food.
I made some of the Bobby Burcher cookies this week, only about 1/3 of a batch, and changed it, also. They are the stovetop cookies which are chocolate-oats-peanut butter originally. Well, this time, I put raisins into the sugar/liquid/cocoa mix, which cooks until it comes to a boil, then boils for 1 min. before you add the oats.
That added a good flavor, and allowed the raisins to plump up without pre-soaking.
