This week I've washed, chopped, cooked, and put away celery, greens, carrots, broccoli, etc. And, speaking of shortcuts...I buy the corn, ready to go!
Usually, I cut the vegetables, then make the meals, then go to the next. This time, I cut the vegetables by what would go bad first, then cooked that vegetable alone, and refrigerated it.
When I had enough for something (ie: chicken pot pie.), I made it. If it got to be too many days, I froze the vegetables, and will use them as I am ready.
So far, this is working better than having to have every vegetable before I cook, and cooking everything at once.
This method allows me to just add pre-cooked vegetables to the pan, add chicken or meat, and move forward.
I've also used them for unplanned meals. For example, I had a pack of Asian meal starter in the freezer, but it wouldn't really feed us both. So, I added some freshly cooked celery, broccoli, etc. to it, and had the base for a good fried rice!
Also, for lunch today, I put greens and onions in my pan, added beaten eggs, and had a sort of frittata!
