Those meats will make some good meals. I especially like the idea of having the salami.
Dehydrating cilantro is a good idea.
Last month, I decided to try some freeze dried herbs and such. I figured that, until I can grow them in the spring, they would last longer than the fresh version. One bunch of fresh costs the equivalent of 1/2 - 1 bottle, which will last many uses. So, it was the smart choice, cost-wise, as was your choice, because your bunch will be able to be used many times.
Some of the freeze dried are better than others, and a couple are completely addictive.

Yes, the meat and eggs would be more than the rest. So, not bad at all, especially with bison in the mix.
