Untill, I tried that arched potato peeler I bought last year(?)
Once I got a plan it went great and I ended up with 4 Tablespoons of Lemon juice.
I used those small storage which can contain 2 tblspns worth.
Ok, I washed the lemons and cut of both ends of the fruit.
Then I peeled the lemons. I went slow and left the white pulp on the lemon, and removed almost see through strips and bits of peel.
This left a lemon void of its peel. It looked like the toe end of a white sock. LOL I stuck a fork in and twisted all the juice out of it over a soup plate that has a rim.
The seeds came out as well and were easy to remove from the juice. The good thing was that the pulp came out with the juice - which works for me.
I did this over a small container and got the 4 tablespoons of juice. Leaving me with the sock toe.
I slice those in to strips and froze them in a container as well. I can add those when I just want a touch of lemon flavor.
So 4 containers all together. 2 juice, 1 zest and 2 innards.
These 4 lemons were on the small size. During the summer I should be able to get alot more of everything.
But that peeler made this easy peasy! All 4 containers are on the freezer door shelf.
