I had some good meals at the beginning of the week, having stew and a ground meat and pasta dish. But, then I got sick a few days ago, so didn't really eat much until last night, when I had a light, quick, chicken and broccoli dish.
I'm hoping to make a list of menu selections, for this month, today. Dh and I eat a bit more randomly, now that it's just the two of us, so it's harder to stick to a menu than it used to be.
I still plan making foods, such as broth or soup, but which day we eat them is not guaranteed. Sometimes we just don't feel like bothering, and eat something else.
The best is to have some meals frozen. We love that, because the biggest decision is what to choose! I just have to make sure that we have regular cook days so that there's something to choose from! When I have lots of fresh things, I like to prep the vegetables/meat/chicken ahead, say the night before, or morning of, then give them a quick cook at meal time.
Hopefully, this week being the beginning of the month, and now having a freezer in the new refrigerator, it will be a cooking week to meet the goal of having a couple of options.
