One head of Cauliflower break apart florets and cut into small chunks.
Russet potatoes I leave the skin on - remove blemishes and dice to same size as cauliflower.
Onion or leeks or both - diced but smaller than potatoes.
Garlic to taste - mushed
Peel a few large carrots and cut into small coin sized chunks. Cook in a separate pan or nuke to add to the soup after mushing the potatoes & cauliflower.
Grated Cheese of your choice - I like Cheddar
Broath - I use Chicken 2 boxes
Add carrot water, more broth or water as needed
Some flour and butter and a bowl for the Rue.
Paprika, Salt & cracked pepper
Step one - prep everything
2 In a large pot heat up some olive oil
Toss in onions and garlic - warm on low heat.
3 Add potatoes, cauliflower and broth. Salt & Pepper to taste.
4 Cook or nuke carrots in a pot to add "after" mushing the cauliflower & potatoes.
5 Bring to a boil. Make sure broth covers the veggies. As needed add a bit of broth or carrot water to maintain broth level. But be careful not to water down the broth.
Remember Cook Carrots in a separate pot to be added after mushing the potatoes & cauliflower. This is to be a lumpy creamy soup.
6 Once veggies are mashed add the carrots - you might use the carrot water if needed.
7 The Rue - Melt some butter in a pan and add flour - mix well then slowly add some of the hot carrot water or some of the soup to the flour & butter.
As it thickens make sure it is creamy. There is enough starch in the water from the potatoes that you won't need much rue to thicken.
Stir often to prevent scorching of the rue. I'd keep at a low simmer.
Taste and if it's done removed from heat. Serve or allow to cool before storing.
Oh don't forget to sprinkle Paprika on each serving.... just a dab will add a tiny hint of a kick.
I'd serve with sliced cucumber and tomatoes drizzled with Balsamic and sprinkled with S&P

I hope I didn't confused anyone about the carrots. I don't think mushed carrots would add anything to the looks of the soup. LOLOL Of course you could not put them in, or serve them at all. 8-)
