I'm sure this has been discussed before..... The sensor measures head temperature not water temperature. If there's any air in the system, it assumes an overheat is occurring and drops into LIMP. I think they eventually used an ECU update to smooth out the fluctuations of head temperature. Also, there's a bleed kit for the 1.6 Focus. The problem is caused by airlocks in the head after drain down. You need to cut into one of the hoses and add a T piece for bleeding purposes. Alternatively, I've heard using a vacuum fill system works.
