(This is the weekly post where you share your week of food. Did you have anything that really made your week, such as your favorite soup, a lunch out, or maybe you had something new? Find a new food product? A new appliance? Please do share!)
With the heat this week, and other factors, cooking was an epic fail here.
We did cut up a cube steak once, and I made savory meat strips along with 1/4 ringlet onions. I then made some corn tortillas to eat them in.
The dough lasted for days. After that dinner, most nights we cooked a handful of tortillas, and if there were extras, I put them in the 'fridge and ate them the next day for lunch.
I have a bit of cooking to do today, or lose my produce. I have 6 large beets to jar up, celery which needs processing, and some greens that accidentally froze, so they were not a rush. I need to do it all early today. I'd do it now, but Dh wouldn't be amused, after he got little sleep the past 2 nights, and was up and out in the brutal heat with Ds yesterday working on the coop. So, in the next 2 hrs. or so.
I've cut back on my sugar a lot in the past few weeks, I realized. I still plan to make periodic batches of cookies, and angelfood cake, but I've not been doing it, and when I want something at the end of a meal, I either eat a spoonful of Sunbutter, or have 1/4 - 1/3 of a cup of either a 'milk' chocolate Suncup, or the same size of a dark chocolate mint cup. Super palette cleansing/refreshing.
Oh, I do eat 1 t. of sugar a day aside from those, but that's not too bad, I don't think.
The candy is not enough in a day to be a lot of sugar, and the same goes for Sunbutter. Plus, I get tons of protein (= to peanut butter.), vitamins and minerals. Peanut butter is 10 % vitamin E, but this is 45%, and I can really use the E.
So, while I will make our weekly desserts, or maybe every 2-3 weeks-ish, I'm pleased that my sugar consumption is so low on a daily basis.
Wish me luck with my prepping/cooking.
The chicken fried rice was delicious, btw, and we ate the leftovers for 3 days last week.
How was your food week?
