I had a hunger for an omelette.
First I washed a med russet potato then nuked it for 3 or 4 minutes. I let it cool a bit then diced it up and set it aside.
I took some thin sliced sandwich ham I had frozen and thawed three slices. I had a frying pan on low and thawed the ham slices first before dicing and also setting aside.
I broke 3 eggs in a large bowl set aside.
Charlie got one egg in his bowl.
I then diced some frozen veggies
1 roma tomato
1 portion of a bell pepper
1 raw onion not frozen
I seasoned the ham and potato in the frying pan with some butter, S&P and fresh Rosemary
I added grated cheddar cheese to the eggs, re mixed
and added Thyme, S&P, and garlic powder.
Stirred the veggies into the eggs.
I had been stirring the diced potatoes & ham and added the eggs cheese mix.... I stirred then turned to med low. I let it cook not stirring until the eggs were not just completely set. Then stirred well and served.
I ended up with scrambled eggs for three breakfasts. It was really good this morning and I may or may not sprinkle a bit of Salsa or Tabasco on it. Usually I have with toast, fruit and juice.
It is a bit time consuming but I think you can find a way around that. 8-)
