Aluminum pans are very handy, and I think that your idea for them is perfect.
I agree! The less cooking close to a holiday, the better. Prepping/pre-cooking is tiring too, but it's really worthwhile when you get to the day when people come over. I just prepped the month's veggies for almost 7 hours today, but I won't have to think about it again until January.
Yes, I'm sore, and my hands and neck hurt, but it's done now, and I won't have to think about it for weeks. Now to cook, lol!

Potatoes can be fickle like that. Next time, you can partially cook them in boiling water, drain and let dry, then make your oven recipe as before.
However, your solution is great! I love potatoes with breakfast!
