Trick to prevent boiling over -
Place a wooden spoon across top of pot then lid. Stir often and put wooden spoon and lid back on
Add water after an hour... 2cups for my pot
I smushed everything when soft.
Used dill weed, basil & parsley &
Grated the carrot.
Not adding cheese to this combo of herbs.
As for peppers... I would go mild and use herbs that go with the peppers so no clashing. You might grate the peppers or slice really thin.
And taste test often.
I am have toasting small loaf of multi grain sliced in half and top with mild cheese.
Provolone perhaps.
