Russets diced to equal amt of cauliflower
S&P I prefer Cracked pepper
Chicken broth 1 or more liters
Carrot coins
Celery diced
Onion diced
Bell pepper diced
Garlic minced
Butter or Olive oil
Herbs to taste
I use Rosemary & thyme, or Dill & Tarragon, whatever combo strikes my fancy
Soften garlic & onion in butter with herbs
Add & stir celery, carrots, bell pepper
Stir add broth and cauliflower.
Cook to a boil then simmer till potatoes and cauliflower are softened to desired consistency.
Add more broth or water as desired.
Letting soup sit in fridge overnight imprives
The flavor. I serve with cheese toast or garlic toast.
Before serving I often add some grated cheese and sprinkle paprika and parsley on top.
