It's going to be a strange month, food-wise, as I can't shop for much again this month.
I need to refill and get water, no matter what, get cheese and jam for Dh - or else he won't have caloric foods that he needs, and won't have sandwiches, or other food besides whatever dinner I can come up with.
We will manage. At least I got some food in the freezer.
I got 7 bags of broth, 1 1/2 Solo-type cups per bag.
4 meals - 8 pieces, of chicken pot pie pockets/hand pies, and hope to use the dwindling meat to make a couple of other meals.
One may be patty melt pockets. I have 2 packets of stew meat. It's eh, not like another kind that we had which was really good, but beggar's can't be choosers, so use it we will. We can grind one of the packages, and I can put the seasoned ground meat in the dough pouch, with sautéed onions on that (I have about 4 or 5 onions and think it's a good use for 1 or 2.) and Dh can put cheese, if I get him some, on that. Seal and bake. That could be another 4 nights of meals.
What I want it spaghetti, but think that my last baby roast should become chili. Hopefully enough for 4-5 meals in the freezer.
My thought pattern is this:
If I have 4 of something, we can eat that once a week for a month. If I have 4 somethings in the freezer, I can cover 4 meals a week for a month.
If there's more than 4 of something, then it can be had once a week for 5,6,or 7 weeks.
I also have 1 more time of Japanese white sweet potatoes, and have 2 bags of baby carrots.
In the freezer I have a few small bags of veges that I cooked and froze.
I had wanted vegetables, some fruit, chicken, and of course meat, but that will have to wait.
I have 3 random pieces of meat in the freezer. All are small, but definitely do-able. One is a brisket. I wish my slow cooker was up here, but I do have a pressure cooker. It feels like something for a special occasion.
Also, a small hump roast. That's specifically for bbq'd burgers, since it's the only place on a buffalo with any fat. I need to get a bbq one day, mine is history.
And, I have 2 very small beef short ribs. I could save them for my birthday, or not. Has anyone cooked them before? I don't have use of commercial sauces, tomato products, etc. I think brown the outsides, then put them in the pressure cooker with carrots, onion, and celery?
So, I'm making Ds's list, at least, and he said that he needs to cut his list in half this month, so we are discussing it.
In any case, whatever we have we are thankful for, as it's all good. And, the hens are laying so we can make bread, or eat eggs some days. Dh wants waffles once a week. I have the mix, now I have the eggs.
Oh, and I'm thrilled that my mug showed up after having been missing. It holds a good amount, has the edge that I like, etc. It shows our hardware store as I remember it originally, on one side, and the modern building on the other.
