It's the technique, I'm convinced....
I place them in salt water for several hours before cooking, and heat my cast iron skillet for 5 minutes before putting in 2 T oil and the porkchops. Sear on one side for 3 minutes. I sprinkle brown sugar on top during this. Turn the chops over (I put brown sugar on the other side) then slip in a preheated oven at 410 for 7 minutes. Voila!
