Yeah, I was aware of the water nymph thing, though not the bit about acquiring a soul by marrying a human man. The soul bit fits Undine of course, but it still seems such an unlikely name that I'm puzzled by its use. I've never heard of anyone else named Undine or Ondine and I couldn't find an instance of either online.
I suppose I ask too much about this name. It's just that the ugliness of it bothers me. Why, I ask, would parents stick their child with such a name? Even with a different meaning, something bad was bound to happen. And yet, parents do.
Perhaps I don't like that it seems to fit the character so well, and yet, that's common enough too.
