I actually like Khao Phad very much too. Pretty much was like fried rice with meat, veggies, special spices and sauce. There were some times when I ate it in downtown Takhli however where I discovered various insect parts and mystery meat. Chicken or rat is what the question was in peoples minds. That was a turnoff. In 69-70 when I was there, they opened a resurant on base run by locals and local cooks called the B Resurant. I think it was somewhere near the base theater /airman's club. . Very good food and the food and methods they used were under the watch of the chow hall people and/or hospital people.
The B Resurant served very good cow pot as I called it. They also had something that was like an egg omlete that was stuffed with Khao Phad or something like it. Liked that very much.
