I was thinking about this recipe, where the hot lentils are mixed with the dressing, etc. And, wondering how it would be with Asian flavors?
For example, a vinaigrette that includes soy sauce, garlic, and ginger. Maybe even a touch of toasted sesame seed oil. Perhaps a drop of honey? And, for the citrus bite, any citrus...lemon, tangerine, etc. Btw, she used the lemon zest, not just the juice.
I would salt the water when boiling the lentils.
