Much like that great salad question, if you were winging a soup...just a kitchen sink soup basically, what are your favorite ingredients to put in it?
When I could eat what I liked, I liked things like carrots, onions, celery, corn, red bell pepper, and greens of some sort in my winging-it soups. Sometimes, if I had them, I'd add some cauliflower, green beans, cabbage, and/or peas.
I usually added a can of tomatoes, and put in a can of V-8. If I had chicken broth, that too.
Chicken was nice.
I had standard spices such as salt and pepper, mild paprika, garlic and onion powders, and maybe a dried herb, but not so much as to overpower the flavors.
I got to where I sautéed my onions, pepper, etc. before putting in the pot. Extra flavor.
Depending on the situation, I used to sometimes add beans. Something like Navy/cannellini, etc.
I didn't add a carb, then each night I could choose from small pasta, rice, etc. for that night, and change it another night.
With it might be bread, bread and butter, or cheese toast - white/country, sourdough, rye, rolls, etc., garlic toast, cornbread, or crackers. Also, you can serve grilled cheese or other sandwich with it.
