So, he took the steak, and cooked it in a Dutch oven with onions, carrots, and not sure what all.
Then, he took his last couple of cobbler potatoes, and made mashed potatoes with them.
Then, he cooked the handful of spinach that he had left.
And, he had more carrots than anything, so candied them ala my grandmother/mother/me.
There wasn't a lot of any one thing for 3 people to share (Aside from her cereals, a baby food, and snacks like yogurt, etc. Thyri eats what they eat for dinner, and if she's up before Ds goes to work, he makes breakfast for her. They usually share eggs, etc.) but with everything, it worked well.
I'd be happy to have a piece of pot roast, mashed potatoes w/ pot roast au jus and the vegetables from in the pot, some spinach, and candied carrots!
Now, if it was a holiday, you could make something similar, just in larger quantity, and it would be enjoyed by all.
Although, Ds said he spent quite a bit of time in the kitchen making it!
You could change out the pot roast for any roast, or maybe chicken, or other meat.
The mashed potatoes are good with the au jus, but if you were having another meat, you could make au gratin potatoes, new potatoes with butter, parsley, and chives.
And, the spinach could be something like asparagus.
Anyway, food for thought!
