I haven't baked anything recently. I have tons of blueberries and blackberries in the freezer. I don't know why I stopped baking muffins, pancakes and waffles. Hummm?
Plus I bought a huge box of 1/2 plain applesauce and half cinnamon. They are the small lunch cups. Oh I remember I ran out of cinnamon - a MUST have spice. And a few other things.
All are replaced so I am making a list of what I need to make and freeze. I think, to be honest, the holidays make me sad so I cut back on projects.
Rice is a must have. I have some Minute rice but prefer Jasmine and other types. I do have brown rice but need to buy a bag of Wild Rice. The kids gave me a box of Uncle Ben's Long Grain & Wild Rice. I fell in love with Wild Rice in MN.
The kids also gave me a bag of new potatoes. I have some russets and some sweet potatoes. These are from IPFoods.. so fresh and odd shaped, marred, etc.
I boiled a mix of New & russets, peeled but whole - all approximately the same size. Once cooked I kept in the fridge and used them with meals. Breakfast, dinner and a few lunch of mashed alone.
?? How do you freeze celery, before cooked or after cooked and what do you prep it in. Butter, OO?
I have ginger in the freezer... need to use it more. It's on the door but it flies right over my head. LOL
I love fried rice for any meal. I use reg Olive Oil, onion, peppers, always 1 or 2 roma tomato, garlic, ginger if I remember it, plus anything else I can put in it, such as green peas, french style green beans, etc. I don't add cauliflower, or broccoli. But shred carrots, and snow peas of course but no cabbage. But I don't add eggs. Instead diced chicken, or pork. Opps - Pepper, ginger powdered, & sesame seeds.
Also some Soy sauce - just a touch, plus sesame seed oil a soupcon's worth.
Unhealthy - too much cheese. But sandwiches are on Whole Wheat or other, or Brioche Buns with smoked turkey, cheese (swiss or cheddar or if I can afford some Smoked Gouda plus a good mustard, Not yellow but whole grain mustard, maybe lettuce, onion & tomato.
Chicken breasts, Angus beef burgers, Angus ground beef, Italian ground sausage for pastas. But also fried chicken strips (S) but may have too much salt.
Veggies, Beets which are low everything. Corn on the half cob. with pork or chicken, and veggies. Salads I eat off and on. Soups, that's is potatoes & cauliflower. I have those 12 beef tamales to soup up. ALso I still haven't made lentil and brown rice soup, nor black bean soup. December was a downer with all the stupid paperwork - which is still coming in the mail. 8-(
Lots of soups on my list. I just feel a bit overwhelmed yet.
So I have pork chops, chicken, and egg rolls, breaded chicken, and lots of veggies for the soups.
My coffee is now regular half folgers and half decaffeinated folgers. A bit on the weak side but I can still drink the same amount without side neg effects.
I have tons of fish or all kinds - I can't ignore them anymore. At least I started on the fish sticks.
I been dragging out my fish menus. No more excuses for NOT COOKING THEM!
Still I feel guilty for eating too much cheese. But it only lasts for a week and I make grilled cheese sandwiches with tomato soup, cheese & crackers, and other cheese meals. Then I'm out for a while. It's the German in me!
I am not eating enough salads. But put LTO on sandwiches. I have cans of Gourmet tuna that I put on the sink planning to make a salad but it just sits there then goes back in the cupboard. Oh well. 8-)
Plus it has been foggy, overcast and the sun comes out for 1/2 hr. So depressing days. I doubled my Vit D.
I no longer like the cold. I think I had enough in MN. But it was bitter cold in Dallas, and here. I much prefer the heat from Mexico.
Who knows which way the wind will blow this year.
