Good books on such subjects are always a big help.
I think that we were just lucky enough to eat in the alfalfa sprout era. Those were the days when sprouts were 'in.'
Some higher end restaurants utilize them, and microgreens, these days, but a sandwich with sprouts was easy to find in the 60's and 70's. Less so now.
