I ended up with produce, yeah!
But, it meant a lot of prepping and cooking. I spent 8 hrs. one day without counting the cooking time.
Then, on the day I cooked everything, which I do one vegetable at a time, so that I can freeze each to use as needed over the next month, I decided to make fried rice.
It was one of the best ones that I've made in a long time, and I still have some to freeze a little!
I also made bite-sized chicken pieces in gravy which we had over rice. That lasted us for 2 meals. Each was made with some chicken tenders.
When I chopped the celery, I made 2 sizes...regular, and a finer dice, and kept them separate/cooked them separately. The finer dice is for stuffing. It's not for Thanksgiving, but I like stuffing any time, and haven't had it in ages.
Once I make the bread cubes, saute the onions, and make more broth, everything will be in the freezer. I like it on the side with chicken, etc.
