Hooray, it's still Sunday, lol!
My days of food were either great or horrible this week.
The good days were chili, chicken noodle soup, chicken salad sandwiches, and a brothy Asian-style soup.
Two days, I hardly ate, and was dangerously hypoglycemic. Maybe the worst I've been in many years.
I was so proud of Ds! He came up with a gf facsimile of a bagel. The outside texture was perfect, nice inside, etc. We've been trying for years w/ gf flour, but he did it with, not only gf flour, but our manioc! (Flatbread flour.) Unfortunately, no one got a photo before it was eaten, lol!
I'll be trying, copying his method, one of these days.
The Asian-style soup was good. I spiced up homemade chicken broth with things like ginger. Then, I added a handful each of raw, cut up, broccoli and greens. I cooked it until the veges were done.
Then, and this was new for me, I broke up some of my pad Thai noodles, which only take 3 or 4 minutes to cook in boiling water, max, and dropped them into the boiling soup, but off the burner.
I let it sit for about 10 mins., and they were perfect for me. In the past, we've always cooked them first, then put them in our own bowls of soup, to avoid too much starchiness in the soup. This method didn't cause that problem, and saved a big step. I didn't have to wait for a pot of water to boil, then have to use a colander to drain them. That was 2 less large pieces to wash afterwards, too.
