Veggie soup sounds good.
That's my plan for sweet potatoes, also. I only have 2, so we will probably bake them, but when we get more, on a mini-shopping trip, if they have them, that's what I will do.
Are you going to leave them cut up, or are you going to mash yours?
I was thinking of mashing for use in baking, but was torn for eating as a side dish. We can eat them mashed too, as a side. I also bake them, and we have them like a baked potato.
How do you season yours for freezing? Butter, salt, and pepper? Or, do you add butter, sugar, and cinnamon?
