I'm still thinking about fall/winter soups and such.
Does anyone have an idea for a tomato-less cabbage based soup?
I have meat which could be used ground, or in pieces.
I've got a head of cabbage, onions, corn, celery - I hope, maybe greens but not sure, a few carrots only, and....? Oh, a couple of beets but I'm not sure that I want to dye my soup!
I could just make a vegetable forward soup with meat...?
What flavor profile?
I want it for next Monday, but want to make it ahead.
My problem is that I always seem to put tomatoes with cabbage in soup, to one degree or another. This would be my first without tomatoes/tomato sauce, and I'm having trouble picturing it.
