The rest of the time I have had breakfasts of Avocado Toast on 2 slices of Multigrain toast or 2 multigrain hotdog buns. I top the smashed avocado with Extra Virgin Olive Oil, Cracked pepper, Sesame seeds and Crushed hot pepper flakes.
I am trying to gain weight thus two of what ever for breakfast.
Or I have two BLT's on multigrain toast with a wipe of mayo, tomato, romaine and S&P plus 2 skinny precooked bacon slices.
Option 3 is 2 fried eggs, hash browns and 2 slices of bacon.
Usually #1 is 4 days a week, #2 is 1 or 2 days a week and #3 is alternate if I didn't order enough avocados.
I am trying a new experiment and have cut the green tops off a number of green onions and inserted the bulbs with roots in a glass of water.
Apparently the tops will re-grow. That would be nice. I have used up all my Shallots and Garlic but can't replace till Oct. Boy is my budget tight.
I used flour S & P to dredge 6 drumsticks and 4 bone in thighs. I then fried in a little butter and a touch of corn oil. I browned but didn't turn them down soon enough and don't have a lid for my frying pan...instead I used a large screen to keep grease in pan.
I was able to eat what was cooked,,, then put rest in microwave for lunch the next day.
Rice is back on my menu... Plain with butter, S&P and green peas. And as Fried Rice with what ever is available. I tried fried rice last night with jumbo med shrimp. Hmmm. Need to brown them. They are cooked but bland. Rest was good.
I have decided I prefer sliced Smoked turkey breast for sandwiches. If I have it on Multi grain bread - slices are large, thick and good - I sometimes smear avocado in place of mayo. a slice of cheese, onion, tomato and lettuce. Pretty dang good. LOLOL
Or Grilled cheese and turkey breast slices with onion and spread Maille Old Style whole grain Dijon Mustard. YUM!!!! Or not grilled adding lettuce and tomato.
I have can of Prime Fillet Wild Caught Gourmet Tuna. It is Bumble Bee Tuna in h2o. There is also a link by which I can trace my catch.com
I eat tuna in two ways right now. I huge bowl of lettuce, corns, onions, cheese, croutons, seeds, S&P, green peas, red or green or yellow/gold peppers, green beans, snap pea, blah, blah, blah! I make it in a med alum bowl and add some dressing usually ranch or blue cheese a whole can of tuna or half a can. I save the half for whatever.
I sometimes add to hot pasta, cream of mushroom soup, cheddar cheese and crushed potato chips in and on top with A&P and Paprika. I haven't fixed this in a while. But thought of it. I never have the chips on hand. LOL It has to have chips!
But most often after the large salad I make tuna salad for sandwiches. Mix tuna with onion, s&p & mayo on toasted Multigrain bread with Dill pickle slices.. pickles never on the sandwiches. And I have pickles with every sandwich.
I have a bunch of premade hamburgers, some plain ground beef, some Angus Beef. I occasionally soften break apart and add to spaghetti - I make the sauce from all the romas that I didn't use soon enough. I have them in bags in the freezer - mush and add mushrooms I froze, onions I froze, peppers of all kinds, etc. etc. I used tomato paste and lots of herbs. Basil, Oregano, Marjoram, parsley, and whatever else I like. I love Rosemary & thyme on potatoes, and coleslaw along with other variations... I get fresh rosemary from my neighbors yard.
Also I do follow that chart I have on my cupboard door. LOLOL sometimes I just can't decide what I want and that chart inspires me.
So breakfasts are A toast or BLTs or fried/scrambled eggs with bacon or sausage patty with toast (PNB) or plain butter on raisin toast.
I ate the last of my cinnamon French toast. YUM... so have to cook up pancakes and waffles with Cinnamon & blueberries.
I have my 4 plums on the counter and will make some Plum preserves. Not alot just enough. I have 1/2 jar of raspberry preserves left. I also have some blackberries in the freezer and will make them into preserves as well.
I have a few thin cut pork steaks, regular chops, a few types of fish. A half a turkey breast I need to roast but will have to cut it in half.
I still haven't learned to use my air fryer.. I just rearranged my kitchen. but still no spot big enough for the fryer. Dang.
I have two of the bar stool chairs in the kitchen. The tall 4x4 ft table is in the library. I have tons of baskets with rocks & fossils on it. The top of the retaining wall will never be decorated. SIGH!
I am dying with all these dang boxes. I can't afford to pay for the trash company to pick up for recycling. Boy was going to take some of the best for their things to go into storage when they sell their home and move a pop out trailer on to my property here. I have gotten rid of over half the cans, alum, plastic, etc, etc, so am now emptying Boys small well not small but not large trailer that I am finally emptying of plastic water bottles.
After that is gone then DGS will have found another small one person trailer to pull behind his car. That once it is fixed up it will be put in place of Boys trailer outside my bathroom window till Boy & DDIL sell their home and leave for the Philippines for 6 months.
I do not want them here with their 4 small dogs that bark all the time. Even for 6 months. It will drive Charlie, me and the neighbors nuts. 8-(
