That sounds great...to freeze French toast, etc., then toast. Sounds like how Eggo's started! I've never actually eaten them, but always thought that the concept was brilliant.
No shopping yet. Ds and family are quarantined since the young guy who he drives to his jobs 2 days a week got sick. They are waiting for his dx. This guy had covid once, and has had 1 of his vaccines.

Do you mean freeze the bread pieces, or once they become croutons?
I used to freeze bread cubes ahead to make Thanksgiving stuffing with.
Croutons can be frozen, but they can also lose some crispness sometimes, as well. If they are dried well enough, then an airtight bag out of the freezer should work for a while - but oil on them eventually goes stale, OR, if you freeze them, and they don't thaw as crisp as you like them, you can put them in the toaster oven for a few minutes to prop them up. :-)
You need quite a few things, too. I hope that you can order them soon, and that they have everything that you want.
