I've just started freezing cooked onions. Generally, I just start with fresh, but now: A - I'm going too long between shopping trips :-( and the onions can start to go bad, and B - It is easier. Thaw and start a less time consuming meal. I wouldn't do them all, but a few now.
You can do onions and celery sort of at the same time, in the same pan. I don't use celery in every dish, though quite a few, so I don't cook them together to freeze. But, if I'm cooking them for a meal together I put the onions in first, then only a couple of minutes later add the celery to them.
For which dish with the peppers instead of carrots?
I haven't slept tonight...very tired, so forgive me for being dense, but the seasoning is for which dish...?

I'm sorry to hear about the mower, AC, fence, bathroom, and ceiling. That sounds like here...we seem to be at a standstill. :-(
I hope that you can get your medical appts. done, with new glasses, etc.
Remember the reading glasses that Dh got in May, on sale? I love the frames. They don't bother me, don't slip, etc. But...they aren't strong enough. I have to get the strength I was using before. Since I'm not going to be able to get to/afford seeing the eye Dr. right now, I just went to Amazon and got something similar to these, but stronger. Not optimum, I know, but I need something, and those will hopefully do for a while. I hope that they are even near as comfortable as these.
Hoping for an increase in luck and positive forward momentum for us both.
