Because I couldn't eat well this week, I ate too many canned pears.
But, I'm starting this week with 1/2 batch of fried rice to heat in the toaster oven as needed. Not really what I want, because I didn't have all of the ingredients for it when I made it, so not my best, but better than no meals to take my meds with.
We need to shop because water needs refilling, and I could use lemons, broccoli, greens, and maybe a few more onions.
But, the brother is here today (they went to the coast with him today.), tomorrow, and maybe leaving the following day? So everything will have to wait until end of the day Wednesday. We will survive, but it just needs doing pretty soon, especially the water, which we were supposed to get on the 3rd.
The lemons are going at a frightening pace, because I'm making lemon pudding every 3ish days while on my antibiotics. Lack of food fuels many of the problems I have with the meds, and I just don't have snacks. I couldn't eat most of them if I had them right now.
I'm liking the pudding because of vitamin C, and it's easy to eat.
This is just a modified recipe from my lemon meringue pie filling.
The first time I made it, it was too sweet without crust etc. So, the 2nd time, I modified it further, cutting the sugar back.
This morning, we were making it in the Vitamix...much easier, and cooler, than stovetop...and Dh was putting the ingredients in. With no actual counters, I have a difficult time reaching up and in, so I read him the amounts, and he puts the ingredients in.
I also cut back the liquid a little, because my starch-flour blend wasn't thickening it as much as I'd like.
So, I read the amount for sugar, and there was a misunderstanding, and he put the old amount of sugar, which was too much, especially with less liquid.
When it was done, I tasted it, and it's Sweet! I will have to eat 1/2 as much per time, and I already am eating a small portion. Oh well, no changing it now. It will be fine until next time.
