Here is the recipe:
Plum's Peach Upside-Down Cake
Flour, 2 cups
Sugar, 2 cups
Eggs, 2
Light Olive Oil, ½ cup
Baking Powder, ½ teaspoon
Baking Soda, 1 teaspoon
Salt, 1 teaspoon
Vanilla, 1 teaspoon
Large Can of Sliced Peaches in Heavy Syrup
And, the syrup from the peaches, + however much water it takes to make the total liquid (water and syrup.) = 1 1/2 cups. If there's 3/4 cup syrup, for example, then you also need 3/4 cup of water.
Preheat oven to 350 degrees, and oil a 9” x 13” Pyrex pan.
Mix everything but the fruit in a bowl until smooth.
Make a single layer of peaches at the bottom of the pan.
Pour the batter carefully over the fruit.
Bake for about 45 minutes, until a tester comes out clean. Serve warm, at room temperature, or cold.
