Summer is pretty much here for several of us.
Have you got plans for lunches and dinners that won't be too much to make/eat in the really hot weather?
I just got done with Ds's lists, through August, so have a couple in mind.
For example, cook once, eat 3 x's. I think that they are going to barbecue on the week of the 4th, if not exactly on the 4th.
My suggestion was to grill hotdogs, a couple of burgers, and some chicken. Also, to have potato salad, and coleslaw, if they wanted.
Then, they could eat the hotdog on barbecue day, but have the grilled hamburgers the next day, as sandwiches. And, the grilled chicken the following day. Both with leftover potato salad/coleslaw.
Also, meal salads with chicken or meat, shrimp for people not allergic.
Sandwiches were on the list...various, from tuna and cheese/avocado/tomato (blt would be nice, too.) to cold cuts to slight cooking with grilled cheese.
We are limited in what we can eat, so I go for less cooking in the heat of the day, and more like warming up food for just a few minutes. Or, eat some foods cold. I like cold proteins like chicken, meats, etc., just not so much with carbs.
Also, we can have pasta, as long as we cook it outside.
What do you plan to do? Will you cook, just at a cooler hour, or will you eat no-cook/barely cook meals?
