The week began with nothing special, then, when we were bored, I suggested fried rice like the last time, using already sautéed and cooked, now-frozen celery, etc.
It was tasty, and once again, made enough that I had several one-serving meals!
Since shopping, I've made a chicken broth, which came out very well. Sometimes are better than others.
Also, I broke down, washed, and chopped 6 bunches of celery, several of broccoli, and some greens. Today I have to cook and freeze them.
We're supposed to have meatloaf with Brussels, etc. today. I finally decided not to layer Dh's pie.
I have cream cheese, whipping cream, and a can of cherry pie filling. Oh, and I have gf grahams.
The final dessert will be:
Fluff the cream cheese and add sugar, vanilla, and a bit of lemon juice.
Whip the cream.
Fold the whipped cream in with the cream cheese mixture.
Finally, instead of layering, I'm folding the cherries into the fluffy cream mixture, then putting it into a graham cracker crust that I'll make from the graham crackers. Voila! Cherry-cream cheese ice box pie!
I did give Dh the choice of how I would use the ingredients. I have to admit being surprised by his choice. Hopefully, it will taste good!
Oh, and I haven't made cookies for a couple of weeks...since the snow, I think. So, sometime between cooking all of the vegetables, making the pie for Dh, prepping and cooking the Brussels and meatloaf, I'll just whip up some chewy brownie cookies, lol!
Actually, I love that we only make a few, then refrigerate or freeze balls of the dough for future cookies.
We can make them whenever we like, and they are always fresh. While these cookies are great a day later, we all know that a warm, from-the-oven cookie can be irresistible.
It's just as well that I can't have whipped cream, as I'm pretty sure that these fudgy brownie cookies would be excellent dipped in whipped cream! Dh will let me know for sure, though!
When we did our shopping, I asked Ds to look for 'cookie sugar.' I like brown crystal sugar to top certain cookies with, such as Christmas sugar cookies. It has a brown-sugar quality to it, and a little crunchiness to it.
When my old bag was finally running out, I decided to get more, but couldn't find it anywhere, including Amazon.
I've had more than one type over the years, but this happens to be C&H Demarara sugar. Luckily, they had it at Safeway.
It's pretty tasty with just a little on the brownie cookies, before they bake.
