With your same flavor profile, you could definitely add the things that you mentioned...also green bell pepper, and cauliflower florets...as they take on other flavors well, plus add bulk.
If you weren't going vegetarian with it, you could add a bit of browned ground beef, cooked chicken, or sausage pieces, though I would make sure to cook as much fat as possible from the latter before adding.
