Lentil & Brown Rice Soup
2 quarts H2o
3/4 c dried brown lentils Rinsed
1/2 cup UNcooked brown rice
1 packet Lipton Onion Soup Mix
1 can diced tomatoes undrained
1 med carrot diced
1/2 cup celery
1 T minced Parsley
4 Chicken bullion cubes or equal amt of Chicken broth
1/2 tsp dried basil
1/2 tsp died Oregano
1/2 tsp salt
1/2 tsp pepper
1/4 tsp dried Thyme
Bring to Boil
Simmer for 35 to 45 minutes until Lentils and Rice are tender
Stir in 1 Tablespoon Cider Vinegar if desired.
