I imagine, from my last post, that you've guessed that part of my Thanksgiving dinner was an epic fail. But, some came out great. Let me explain...*looking back in time music playing*
First, Dh is still babying his back, and 2nd, it was just us. The good and bad of this is that, when it's just one or 2 people, you can, and sometimes do, opt for the easier meal route.
We didn't make the corn bread, because everything was taking too long, and if it's not made ahead, it can't become stuffing. That one was sad, I have to admit, but we're making some with another chicken dish, maybe next week, so I'm somewhat mollified.
Then, we didn't roast the chicken ahead, thinking that it would be better hot from the oven the day of.
Well, it was a good thought, but we forgot to do something...check to see if it would fit! Which, it did not. I've never made anything like a whole chicken in it before, just cornbread and other confections, or casseroles, sweet potatoes, etc.
So, when Dh tried at first, the foil *stuck to the top elements!* We had to cool the oven, and then scrape the foil off of the elements.
It was starting to get late, so I suggested breaking it down. So much for the whole, roasted bird. Oh, well. By then I was getting hungry.
Dh cut it in 1/2 the long way, and it seemed to fit just fine, but as it cooked, it started to plump! Really? Sheesh!
So, we took it out again, and cut it down further.
That seemed to work, but by then it was even later, and the oven had cooled.
Eventually, it cooked, and I have to say that it was quite tasty, but somewhere along the way, the sweet potatoes and gravy went by the wayside. I made brothy rice, instead.
Thankfully, the special sprouts were made the day before, and came out great, and the blueberry-orange sauce was also made ahead, and was/is delicious! I know that it will vary with different apples, blueberries, and oranges, but we are definitely making it again! Dh loved it, and so did I!
My baked apples, supposed to cook while we were eating, we dropped, because no one could imagine bothering/waiting by then. We were tired, hungry, and not just a little frustrated. I can make the apples this coming week, or make more blueberry sauce!
I thought of alternatives to the chicken later, but Dh was going to make it work no matter what, I think!
So, that's it, the good, the bad, and the deconstructed, lol!
Oh, and earlier on Thanksgiving Day, I made some chocolate sugar cookies, so we were not dessertless!
