Perfect improvements after the first time I tried.
I added to the coleslaw I had in the fridge.... I really want to blender or a dicer for fine onions & cabbage etc. I finally found the right mix of mayo to vinegar to sugar. I always add poppy seed, cracked pepper & salt. Sometimes pineapple and or bell pepper.
Speaking of cabbage - I rec'd a hugh head of cabbage. So I sliced off an 8th for the cole slaw, the cut the rest in triangle sized pieces. I wrapped each slice in press n seal stuck each one in a large storage bag - I ended up with close to 8 pieces. I pressed the bag to remove the air then sealed and folded the top and closed with a small kitchen clothes pin. I will use those for meals with carrots, potatoes, etc.
This morning I looked up my recipe for making caramelized onions. When down in Manhattan Beach we always went to the Kettle... what an awesome restaurant full of beach people, hippies, normals. LOL. A great atmosphere. Anyway, I always ordered a burger that came with caramelized onions. Wonderful. Or the meatloaf plate - again with the onions.
So with some real hugh onions I am going to make a bunch. The great thing about them they freeze beautifully. SO I will be cooking up at least the two largest onions. I also freeze diced onions so I don't have to dice them for each recipe.
I also used to keep sliced onions on hand, but out of doing so as I cut back on the meat. Now that I am eating good ground beef and have organic pork chops and chicken... Onions are back on my list.
Baked beans are one of my lunch meals. I have to remember to add some baking soda to them as I cook them otherwise - well you can guess.
I am out of ramen so need to order a big box of the small packs for lunches, late dinners and hunger pangs.
Blueberry muffins are something I just ran out of. They are on my buy list as well.
But I have lots of blueberries and once I empty out my neighbors Meat I will be making BB pancakes with eggs - not without LOL - and waffles. No room anywhere right now even with the potatoes, apples, pears, tomatoes and onions on my counter. Oh yeah I have lots of sweet potatoes I will boil and save in meal sized packets. Leaving some for Thanksgiving & Xmas.
I had a number of small but ripe avocados and made some guac with all the spices and TO etcs adding lime juice. I put in a storage bag, pressed all the air out and tossed it immediately in the freezer.
Avocado toast was breakfast for at least 3 days every week.
Boy bought me my Amy's enchiladas. They only had veggie ones but not bad. I have gotten used to Tofu. LOL Finally. But I still prefer the Rice & Bean Enchiladas. Boy says they keep running out of them at the grocery. They make great breakfasts.
Everything salads are on the menu 2 or three meals a week.They taste the same/different every time. 8-)

My desserts have been Pepperidge Farms Santa Cruz Oatmeal Raisin cookies. Soft. I try to keep it at one or two a day and usually only 1 for my bedtime snack. Perfect carb count for overnight
I bought a box of Carr's crackers - I thought I had found my favorite type but nope... Oh well maybe next time.
Popcorn is a good for Charlie me and Chance as snack food. I get salt & veggie butter. of which I just used up the last yesterday when I had fried 2 med eggs, 2 skinny bacon slices and 1 potato pancakes. Very good.
THere was no Apple juice on line so I ended up with some organic Pink grapefruit juice. Yes I know - not to take with my meds.
I only take a sip or two to get my meds down when I get tired of water.
Fish has also be on the menu I have more left to Tilapia cook... it's not sole or shrimp. LOL Oh well.
I ate the pork chop with rice, fried pineapple, long green beans I had frozen then sauteed with butter, mushed garlic and parm. OHHHHH! YUM!
Some of the frozen leftover potato soup has disappeared. I ate three large bowls full - shades of fall.
I almost forgot I made potato salad to go with the sandwiches. Leftovers got eaten with dinners or as midnight snack.
The mashed potatoes also ended up as a dinner by themself. Good but I nuked instead of boiling. Won't do that again.
Well I think that's most of the meals. I eat leftover lunch for breakfast often.
My fruit has been the large black grapes I received the last two or three weeks. THey are delish! They have also given green grapes and the red grapes which I like best. But these black are great also.
Oh yeah I made a box mix of banana nut muffins. Worked for morning coffee.
I need to buy a number of those small aluminum bread pans for small banana bread loaves. I have way to many frozen bananas LOL.
Finally I am down to only 1 large portion of the 10 pounds of Jasmine rice I bought from the kids.
I also have flour in the freezer but need to buy more. And a big bag of Baking soda - so many uses for that and vinegar and I am asot out
