I have taken to freezing tomatoes. There are two benefits. The fist is that tomato essence separates from the tomatoes and become GOLDEN TOMATO LIQUID.
When added to any meal, without the pulp, it is a liquid tomato gold. Oh my gosh the flavor is marvelous.
The second if I want to cook something with tomatoes and they are all frozen... I have discovered that instead of waiting for them to thaw and become mushy I grate them. Boy oh Boy did that work today.
Using some tomato sauce and tomato paste that I heated up I added spices,herbs, etc, etc... and the grated tomato. I also had some meatballs that I tossed in and let simmer for 15 or 20 minutes.
This was lunch - it took no time to cook up some spaghetti - angel hair of course.
Stir the sauce add to the pasta and toss on some Parm. Yummy.
I often grate frozen veggies. But this was so tasty I thought I'd share.
