Ground bison...
While I love correctly handled buffalo/bison, I had never had it pre-ground and packaged.
One day, many years ago, I tried it, and I didn't care for the texture. It tasted alright. So, I stuck with pieces of meat that we cleaned and ground ourselves, which saved money anyway.
Ds, however, uses the pre-ground type, and they love it.
He said that it was a previous butcher that had not worked it correctly.
A couple of months ago, the butcher for our ranch was changed, and Ds hated his meat. He said that it was rubbery!!! Yuck! (I'm so picky, I guess.)
Then, just now, they got rid of that butcher, and got another. And, the meat looks great, yeah!
So, you'll have to give yours a try to know if it tastes good to you, or not. If it does, and the price is right, that would be great! You just can't judge all meat by one try, it seems.
On the other hand, I've never had a bad buffalo/bison burger from meat that we've cut and ground ourselves. They are always delicious!

About the zebra restaurant...I am kind of picky, as I've said. Sometimes there are foods that I want to like, that I think sound good even, but I just don't. A couple, I try now and then, but it doesn't change, I still don't care for them. (Not something that I hate, but something I'm lukewarm on, maybe a fruit.)
That extends to meat. I am picky. While I'd love to be the worldly explorer, eating all kinds of meat on my travels, the truth is, most do not appeal to me. I don't want camel meat, horse meat :-( or any such. I don't want to think about domestic animals, rodent-type critters, or animals like whales, elephants, etc. And, to be honest, the other animals that I might eat, just don't taste good.
So, buffalo, beef, pork once upon a time, and some lamb/sheep cuts are about it for me in the meat world, and the latter would only be now and then, and if properly made.
Birds...turkey, chicken, duck now and then if well made and not wild (make mine a la orange, please, or cranberry.), and I suppose quail?
Fish...I like firm white fish best. Also, and I annoy more people with this...I used to eat anchovies. Oh well.
Shellfish...before the guys and their allergies...crab especially, Dungeness, snow, king, some shrimp, cooked and served nicely, lobster, clams in chowder, and that's probably about it. I've not eaten every type of shellfish, so I might like others, but just am unaware of it. My mom loved abalone, for example.
No, on the chicory. I haven't, because Dh does not like bitter foods, and I'm not a big fan, either. Whereas, our bishop friend loved that flavor profile, and made chicory root coffee, as well as eating the greens.
I know, though, that it can be boiled, grilled, sautéed, etc.
I like a dish with ground meat or sausage, garlic, onions, pasta, parmesan, and greens. I use kale or collards. But, that basic dish can be gotten in restaurants using chicory in place of the greens that I use.
I've seen chicory gratin, grilled chicory, and salad, of course.
Debit works for me, too.
