I've tried to get things on a different day than he's shopping for everyone, but that has backfired in the past, when he's not gone another day that week.
So, I ask for important items when he's going, and save items that can wait for when he's getting less. That way, I can wait a week if I have to on it.
That's true about fresh produce. Our humidity has been more or less depending too.
That's a good way to package the bacon.
Getting out the air on any item is key, but with guacamole, it's even more important. I like lots of citrus in/on it, too.
My carrots froze in the 'fridge the other day. I'm assuming they will still cook up alright?

Have you ever tried cutting it into squares...especially the softer parts vs. the heavier rib sections...and eaten it with creamy dressing, such as ranch, thousand island, blue cheese, or whatever you like?
When the kids were small, I decided that, like eating potato skins, cabbage was healthier for growing bodies, and I replaced lettuce with green cabbage. I was always trying to get extra nutrients into them. :-) Now, Ds says that he prefers it to lettuce for a salad. So, if you get stuck without lettuce, it can be used. You can use vinaigrette, too, but I think that it lends itself to creamy dressings a little better.
Me, too. Bags for the freezer. Containers for the ice box.
I've been trying to get Dh to let me slice/grate his cheeses to store.
Me, too, re: compost. I cook, with 3 bowls.
A keep bowl for bits to freeze for when I make broth, etc.
An animal bowl for peelings, ends, etc. of fruits and veges that the chickens and turkey will eat.
And, a compost bowl for those things that the animals may not have, such as anything I'm not keeping for soup from things like celery or onions.
I also compost things that take a wrong turn in the 'fridge or on the counter, though I try hard for it not to happen. Still, it does sometimes.
Oh, and meat. When Dh cuts up a piece of meat, he gets parts that are tough or in some way undesirable to use. Undesirable to me, but perfectly good. We divide that between the dogs and cats.
If there's a lot of meat, and too much for them in a day or 2, we freeze animal portions so that we can give them some when we like.
