I like both mustard and horseradish, period. So, can see eating one with it.
I've wanted to make my own horseradish this year, but I'm concerned for Dh's heart. It can be a problem, especially since he likes it, and would want to eat it. So, I've so far skipped it.
Caraway is another flavor that's under-used and under-appreciated, I think. I love it with cabbage.
And, when I make the pockets that I mentioned to you, I sometimes add it to the dough to get a rye bread effect. Especially if the filling goes well with rye, such as a patty melt pocket.
Hmmmm, you've given me an idea with your sausage. I wouldn't mind making my own sausage dish.
I start with ground meat, and season to taste like the sausage that I want. I know it's not at all the same, but it's still good. Cook in onions, and greens, plus anything else that you want to, and finally put in pasta. It's a one skillet meal, and the flavorful meat makes it delicious. I'm writing it down as a meal, so that I don't forget to have it one of these days! :-)
