Today I used my fave herbs Parsley, Sage, Rosemary & Thyme from that old song.
I use them quite often but today I open a package of 2 good sized skinless and boneless chicken breast.
I yank my old roaster down from the top of the cupboards. Cleaned it up then used vinegar & baking soda to do a good clean.
I put heat at 400... tossed in some fake butter, tossed the thawed breasts in the hot melted butter.
Salted & peppered both sides added the Parsley, Sage, Rosemary & thyme. Added white wine... Pinot Grigio. I also tossed some lemon juice on the breasts as well.
While cooking I peeled 6 or small russet potatoes. Cleaned then sliced in lengthwise.
I made surebtovturn the breasts as needed.
I added the potatoes, sprinkled with S&P, onion powder, garlic powder & parsley.
Check breasts and when done moved them to a pie tin and covered with a large pan lid.
Stirred potatoes, added butter as needed or water. Once cooked removed to another pie plate then stacked that pie tin on top of the chicken breasts.I replaced the pan lid.
Will fix small green peas and have applesauce for a side. I will get 3 meals from the two breasts & potatoes.
I am looking forward to enjoying this meal a lot. 8-)
