Actually, you mentioned cooler weather, and I immediately thought of your frozen vegetables and chicken. Do you guys like chicken pot pie?
Well, you can make the filling, and serve it over rice, since I know that Dh is preferring rice these days. I've done it, and it's good!
Also, if you don't feel much like cooking a long meal, you can use these shortcuts:
Mix frozen vegetable mix (carrots, peas, corn, green beans.) with your chicken, which has been cooked and cut into bite sized pieces.
Add concentrated soup, such as cream of...celery, chicken, etc. Whatever your preference is.
Tap in some poultry seasoning, for the right flavor, cook for a few minutes, adjust salt and pepper, and voila!
If you want it casserole form to bake, which I love, you can use frozen pie dough for the top or bottom of the dish, or if you like them instead, canned biscuits from the refrigerator section of the store. I used to dip the tops of my biscuits...bought or homemade...into some oil, then put them on the filling which was in a casserole dish. I didn't have them touching, but you can. Bake. When the biscuits are done, the casserole is ready!
If you make one from scratch, I like to mince a little red bell pepper, and saute it with the other vegetables. It gives it a nice flavor, I think.
But, it's definitely one of the dishes that can be made from the pantry!
