I grew up on canned goods, and don't mind them, depending on use. Mostly, I can't eat them now, but I do keep beets, corn, and black olives.
I love Brussels. I have found that cooked in a skillet until brown are delicious. Either in olive oil with salt and pepper, or cooked with sautéed onions and chicken broth.
When cooked with chicken broth, I clean them, cut in half lengthwise, add to the onions, and put in some broth...maybe 1/2-1 cup. As the liquid cooks out, I add a little more, 1/2 cup-ish, and continue that until they are nearly done.
Then, I add the last 1/2 cup of broth, adjust the seasoning, and cook it almost out. The liquid that's left should be almost a syrup consistency. There shouldn't be too much left of it.
Be careful when tasting for salt, as when the broth cooks down, it will be more concentrated.
I like to serve that with many things...mashed potatoes, chicken, meatloaf, or a hamburger/hamburger patty, rice, etc.
Oh, how tasty in bacon grease! My grandmother used the bacon grease from breakfast to make dinner items, including potatoes. Delicious.
Yes, just boiled and buttered are delicious, too. Ddil hates Brussels w/ a passion. However, Frankie loves them! :-)
