This was a strange week, ending with us being unable to cook.
I finished the hard boiled eggs, after making them into a deviled egg salad, and now I'm just waiting to see if we can cook tonight, or not. If not, I'm at a bit of a loss. Even if we can, there's not much here, but at least we can make masa, or something of that nature. We will find out!
I saw a pizzadilla on T.V. yesterday.
You take a flour tortilla, and put it in a cast iron skillet that has butter in it.
On it, you put a little pizza sauce, and any mix of shredded cheeses that you like. Then, you put a second tortilla on top.
When the bottom is brown, you flip the whole thing.
Now, on the brown top you put a little more pizza sauce, more cheese, then top with things like onion, bell peppers, pepperoni, etc. Sprinkle on more cheese, or not.
Put the whole pan under the broiler for a couple of minutes, until the toppings are browned and/or melted.
Slide the pizzadilla carefully onto a board. It will be too floppy to eat at first, so give it 5 minutes to firm up. Cut with a pizza cutter into wedges.
If you like, you can top with parmesan, fresh basil, etc.
