This was another pretty good week!
One night of spaghetti,
Our now weekly chicken and broccoli with half a pack of chicken,
Lemon-garlic chicken with the other 1/2 of the pack,
Eggs for a couple of nights,
A skillet dish with penne, meat, greens, onions, etc.,
And, finally, to finish up the small roast, I made chili. We had quick, faux chili tamales.
It was terrific to have the meat and chicken. I also had a bunch of broccoli, a couple of lemons, 1 bunch of greens, plus my onions, for produce.
I now have 1 pack of chicken, plus one last small piece of meat. Since I have some carrots that need using, celery which also needs to be used, and a couple more onions, I'm thinking of making stock and having chicken-noodle soup one night, making chicken salad from 1/2 of the chicken, then freezing the rest of the broth.
I want to do so many things with the meat, but can only do maybe 2 things, possibly 3 if I stretch it. Maybe more chili, since I had so little this week, and wished there was more, and maybe Asian noodle dish? I want burgers, or meatloaf burgers, but don't think that it will stretch that far.
I am hoping against hope that they will get in meat this month, as promised. It's gone up in price, so I get less, but some is better than none, and I've felt a lot better since eating better the past week or two.
We have eggs in the 'fridge that we hardboiled yesterday, so I can make deviled egg salad for lunches/snacks.
I probably won't thaw the meat until mid-week or later, being the last piece, but at least I know that it's there.
I'd like to make some muffins, but am not sure that I can bake them on this generator. If not, I may make some no-bake cookies, as I've been on antibiotics which wrecks havoc with my blood sugar. It makes me crave sweets, but even if it didn't, I have to have something in between meals to keep it up when it's that unstable.
